The Diagragma Iberico Belotta is a skirt steak derived from the diaphragm of the pig. With its fine grain and wonderful texture and flavor, this cut can be used as a substitute for regular beef or pork skirt steak to enhance meals such as fajitas, ranchera or Chinese stir fries. We recommend giving it a good marinade and slicing against the grain to enhance the flavor and texture. Iberico is considered one of the world's finest types of pork. During the montanera (or fattening season), these pigs feed entirely on acorns and wild herbs, giving their meat exceptional tenderness and a nutty, exquisite flavor profile. The pig's unique ability to store fat reserves also gives Iberico meat rich layers of intramuscular fat that melt during cooking, releasing more flavor and succulence into each cut. This cut is presented by Fermin. Based in the picturesque village of La Alberca, near Salamanca, Spain, this family-run organization has been raising, preparing and providing 100% pure Iberico pork since 1956. Today they continue to dedicate themselves to the artful presentation of gourmet meat, exporting to markets in Europe and worldwide. All their pigs are free from antiobiotics or hormones, as prescribed by Spanish law.
