The same beloved Serrano ham from Spanish white pigs, "paleta" comes from the front and narrowest part of the pig, while the Jamon is the backside. It's usually smaller - which accounts for the smaller-sized slices, but it's also considered more flavorful and tender than the jamon, as it has more grease.
