Undoubtedly the most popular of Spanish cheeses, Manchego is a protected origin cheese made of sheep's milk that can only be produced in the region of La Mancha - yes, the same region where Don Quixote and his noble companion Sancho Panza chased their windmills. Manchego is a firm cheese that's aged for at least 3 months, with a buttery, oily texture and a flavor that is not overtly "sheepy", but still distinct and rich. A great table cheese, it's a no brainer for any cheese board, pairing beautifully with nuts, fruits, preserves and a great variety of beers and wines.
