Patagonia Provisions® White Anchovies have a mild flavor and delicate texture, and they’re canned without a salt cure, so they stay plump and light in color. We’ve added chiles, cider vinegar and sweet bell peppers to our Spicy White Anchovies for tangy-sweet heat. Our anchovies come from thriving, well-managed populations in Spain’s Bay of Biscay and are caught using small-scale purse seines to reduce bycatch. We partner with fishermen who belong to centuries-old cofradias, or guilds, which share profits.
