With their plump, meaty caps, porcinis are earthy, with a deep woodsy flavor that is infused into any preparation. Especially great in sauces, soups and stews, they're also wonderful over pasta, risotto and with roasted and grilled meats and poultry. Thaw the mushrooms at room temperature in a bowl, and don't discard the dark liquid - it's superbly flavorful.
