A Piedmontese specialty, Tajarin is a bright yellow pasta made out of egg-yolk enriched dough, in thin long strands that look like thinner versions of the flat tagliatelle. The eggs make the dough soft and rich, and is typically paired with buttery and creamy sauces like Alfredo or alongside hearty roasted meat sauces.
