The pigs feed for about 2 years on these delicious acorns, developing a meat that is uniquely rich and flavorful. Cinco Jotas' team of expert salters, cellar masters, drying supervisors and other ham crafters then oversee the perfect curing and aging of the ham, which results on a superb, high-quality product every time. This luxurious shoulder comes from the front legs of the pig, usually called the Paleta, rather than the ham. The bone is left in for stunning presentation, so you can fully appreciate the black hoof that differentiates Iberico from any other ham, and so you can carve like the experts.
