Inspired by puttanesca, a classic tomato sauce from Naples, our Sardines in Tomato Sauce are packed in a red sauce with capers, onions, olives and garlic. Sardines reproduce fast, making them a more renewable resource. Ours come from thriving, well-managed populations in the Bay of Biscay, off Northern Spain and are caught using small-scale purse seines to reduce bycatch and prevent overharvest. We partner with fishermen who belong to centuries-old cofradias, or guilds, which share profits and encourage cooperation.
