If you've ever tried a cannoli, you've tried the decadence that is crema de ricotta - sweetened ricotta. A sort of ricotta cheese mousse, this sweet and sumptuous cream is made from the traditional sheep's milk ricotta cheese enriched with sugar. It's perfect to fill cannolis, of course, but it's also amazing when served as a dessert with fresh fruit and chocolate shavings, or when used to fill crepes or to make tiramisu.
