Siberian Sturgeon, from the Acipenser baerii sturgeon, is also known as Siberian Osetra caviar. With glossy dark eggs, Siberian Baerii Osetra is known for a sweet, nutty flavor and a clean finish. It's native to the Siberian rivers but today is raised in aqua farms in the Aquitaine region of the South-West of France (along with many other places around the world). The fish's genetics is strictly controlled, as is the environment it's raised in, which mimic those of the Siberian rivers, their natural habitat. This allows for the endangered wild sturgeon populations to recover, while offering a premium caviar that's also eco friendly and sustainable.
