Famously used as a luxurious filling for burrata, this Italian style cheese began with humble origins. Originally a peasant's dish made using leftover curds, the name "Stracciatella" means "little rags" or "little shreds." The fresh curds made from cow's milk are stretched and torn into white shreds before being soaked in heavy cream. The resulting soft, luscious and milky cheese is also peppered with small pieces of black truffle, turning a once lowly dish into a true gourmet's cheese. We recommend enjoying this cheese on salads, alongside fruits, or spread onto crusty breads and pizzas. When making burrata, it can be used as a filling that spills out when you cut into the burrata. This product is presented by Mamma's Cheese, a Miami-based cheese company that prepares mozzarella and burrata products in the Italian style. Because stracciatella needs to be as fresh as possible, it is made-to-order and therefore takes 2 or 3 days to ship.
