M'hamsa, or couscous, is a Mediterranean staple food enjoyed all around the region of the Maghreb. Mahjoub's hand-rolled couscous varies in size slightly because of its unique production and is most similar to medium-sized Moroccan couscous. The production is done the same way it was done centuries ago by the Berbers, the original inhabitants of the mountainous area. It actually rolled several times to improve the consistency of the grains, which are then rubbed with olive and salt and left to dry. It has a toasty, hearty flavor; enjoy with vegetables, meat dishes, as a side dish or main course.
