A delicious cow's milk cheese with a high fat content (it's not called double cream for no reason!). Fromager D'Affinois is a cheese almost identical to Brie, made much in the same way, but matured for a shorter period of time and made using a process called 'ultra filtration'. This method concentrates nutrients, making this a very protein-rich cheese.
